Ingredients
  

Vegetables and Oils

  • 2 tablespoons Olive Oil
  • 1 cup Onion, Diced
  • 3 cloves Garlic, Minced
  • 2 cup Zucchini, Diced
  • 1 cup Corn Kernels

Spices

  • 1 tablespoon Chili Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper

Liquids and Beans

  • 2 cups Vegetable Broth
  • 1 can Diced Tomatoes
  • 1 can Black Beans, Drained and Rinsed
  • 1 can Kidney Beans, Drained and Rinsed

Instructions
 

Cooking Instructions

  • Heat olive oil in a large pot over medium heat. Add onions and garlic, and cook until onions are translucent.
  • Add zucchini, corn, and spices to the pot. Stir well to combine.
  • Pour in vegetable broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Add beans and simmer for an additional 10 minutes.
  • Serve the chili hot with your choice of toppings, such as shredded cheese, sour cream, or chopped cilantro.

Notes

For a spicier chili, add some diced jalapenos or a pinch of cayenne pepper. Customize the vegetables as desired. Leftover chili can be stored in an airtight container in the refrigerator for up to 3 days.
