Preparation

  • Combine the potato slices, vinegar, and one tablespoon of salt in a small pot. Ensure the vinegar covers the potatoes by at least ¼ inch; add cold water if needed.
  • Boil the mixture, then reduce heat and simmer until the potatoes are fork-tender, about 8 minutes.
  • Cool the potatoes in the liquid for 30 minutes to absorb the vinegar flavor.
  • Drain the potatoes well and pat them dry with paper towels.
  • Preheat the broiler with a rack positioned about 6 inches beneath the heat source.
  • Dump the potato slices onto a sheet pan. Drizzle with olive oil, sprinkle the remaining teaspoon of salt, and pepper. Toss to coat evenly.
  • Arrange the potato slices in a single layer on the sheet pan. Broil until lightly browned on top, about 7 minutes. Flip and broil the underside for about 5 minutes more until golden and crispy.
