Ingredients
  

Beef and Beans

  • 2 lbs ground beef 80/20 recommended
  • 2 cans (15 oz) kidney beans drained and rinsed
  • 1 can (15 oz) black beans drained and rinsed

Vegetables

  • 1 large onion diced
  • 1 each green bell pepper diced
  • 1 each red bell pepper diced
  • 3 cloves garlic minced

Tomatoes and Sauces

  • 2 cans (14.5 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 1 can (15 oz) tomato sauce

Liquids and Broths

  • 2 cups beef broth

Spices

  • 3 tablespoon chili powder
  • 2 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano

Instructions
 

Cooking Process

  • Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and no longer pink. Drain excess fat and transfer to your crockpot.
  • Add diced onion, green bell pepper, red bell pepper, and minced garlic to the crockpot with the beef.
  • Add kidney beans, black beans, diced tomatoes, tomato paste, and tomato sauce.
  • Pour in the beef broth and sprinkle in chili powder, cumin, smoked paprika, oregano. Stir everything well to combine.
  • Cover and cook on low for 6-8 hours (or high for 3-4 hours), stirring once halfway through if you can.
  • Taste and adjust seasonings as needed. Serve hot with your favorite toppings like shredded cheese, sour cream, and chopped green onions.
