- 1 pound ground beef
- 1 can (15 ounces) black beans rinsed and drained
Vegetables
- 1 cup corn kernels
- 1 cup diced tomatoes

- 1 cup shredded cheese
- 1 cup milk
- 2 large eggs

- 1 cup cornmeal
- 1 tablespoon baking powder
Cooking Instructions
Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, brown the ground beef. Add chili powder, cumin, garlic powder, onion powder, salt, and pepper; cook until fragrant.
Stir in black beans, corn, and diced tomatoes; set aside.
In a mixing bowl, combine cornmeal, milk, eggs, baking powder, and melted butter until smooth.
In a greased baking dish, layer the beef mixture evenly on the bottom. Pour the cornbread batter over it and top with shredded cheese.
Bake for 25-30 minutes until golden brown. Let cool before slicing.
