Ingredients
  

Meat and Beans

  • 1 pound ground beef
  • 1 can (15 ounces) black beans rinsed and drained

Vegetables

  • 1 cup corn kernels
  • 1 cup diced tomatoes

Dairy and Eggs

  • 1 cup shredded cheese
  • 1 cup milk
  • 2 large eggs

Dry Ingredients

  • 1 cup cornmeal
  • 1 tablespoon baking powder

Cooking Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, brown the ground beef. Add chili powder, cumin, garlic powder, onion powder, salt, and pepper; cook until fragrant.
  • Stir in black beans, corn, and diced tomatoes; set aside.
  • In a mixing bowl, combine cornmeal, milk, eggs, baking powder, and melted butter until smooth.
  • In a greased baking dish, layer the beef mixture evenly on the bottom. Pour the cornbread batter over it and top with shredded cheese.
  • Bake for 25-30 minutes until golden brown. Let cool before slicing.
