- 4 large bell peppers
- 1 pound ground beef
- 1 cup cooked rice
- 1 cup canned black beans
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil
- 1 tablespoon taco seasoning
- 2 teaspoons minced garlic
- 1 teaspoon salt
- 1 teaspoon ground black pepper
Preheat your oven to 375°F. Cut the tops off the bell peppers and remove seeds. Place them upright in a baking dish.
In a large skillet over medium heat, heat olive oil and add the ground beef. Season with salt, pepper, and taco seasoning. Cook until browned.
Stir in cooked rice, black beans, and salsa into the beef mixture until heated through.
Stuff each pepper generously with the beef-rice mixture and top with shredded cheese.
Cover the baking dish with foil and bake for 25 minutes; then uncover and bake for an additional 10-15 minutes until cheese is bubbly.
