Ingredients
  

  • 4 large bell peppers
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 cup canned black beans
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 tablespoon taco seasoning
  • 2 teaspoons minced garlic
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper

Instructions
 

  • Preheat your oven to 375°F. Cut the tops off the bell peppers and remove seeds. Place them upright in a baking dish.
  • In a large skillet over medium heat, heat olive oil and add the ground beef. Season with salt, pepper, and taco seasoning. Cook until browned.
  • Stir in cooked rice, black beans, and salsa into the beef mixture until heated through.
  • Stuff each pepper generously with the beef-rice mixture and top with shredded cheese.
  • Cover the baking dish with foil and bake for 25 minutes; then uncover and bake for an additional 10-15 minutes until cheese is bubbly.
  • Garnish with fresh cilantro if desired before serving warm.
