  • 12 ounces pasta (penne or rotini)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 10 ounces fresh spinach, chopped
  • 14 ounces canned artichoke hearts, drained and chopped
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh parsley for garnish

Cooking Instructions

  • Cook the pasta in salted boiling water until al dente. Drain and set aside.
  • In a skillet, heat olive oil over medium heat. Sauté garlic for 1 minute before adding spinach and artichokes; cook until spinach wilts.
  • Lower the heat and mix in cream cheese until melted. Stir in sour cream, mozzarella, and Parmesan until well combined.
  • Toss the cooked pasta into the skillet until evenly coated with the sauce.
  • Serve garnished with fresh parsley.
