Pasta Ingredients
- 12 ounces pasta (penne or rotini)
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 10 ounces fresh spinach, chopped
- 14 ounces canned artichoke hearts, drained and chopped
- 8 ounces cream cheese, softened
- 1 cup sour cream
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- Fresh parsley for garnish
Cooking Instructions
Cook the pasta in salted boiling water until al dente. Drain and set aside.
In a skillet, heat olive oil over medium heat. Sauté garlic for 1 minute before adding spinach and artichokes; cook until spinach wilts.
Lower the heat and mix in cream cheese until melted. Stir in sour cream, mozzarella, and Parmesan until well combined.
