Ingredients
  

Chicken Preparation

  • 5 pieces chicken breast
  • 1 dash salt
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon white pepper
  • 1 tablespoon hot hungarian paprika or regular
  • 1 tablespoon slap yo mama seasoning or cajun seasoning
  • 1.5 cups buttermilk

Flour Mixture

  • 2 cups flour
  • 4 tablespoons cornstarch
  • 1.5 tablespoons slap yo mama seasoning or cajun seasoning
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon paprika

Egg Mixture

  • 2 pieces eggs
  • 1 tablespoon franks red hot sauce
  • 1 cup buttermilk

Spicy Mayo

  • 0.25 cups mayo
  • 0.25 teaspoon cayenne pepper

Buns

  • brioche buns
  • enough for deep frying vegetable oil

Instructions
 

Preparation

  • In a large bowl, season chicken breast with salt, onion powder, garlic powder, paprika, slap yo mama seasoning, white pepper, and buttermilk. Marinate for 30 minutes to 2 hours.
  • Heat a large deep pot with oil and allow to slowly heat up to 350F; insert a wooden spoon and oil starts to bubble.

Flour Mixture

  • Mix flour, cornstarch, onion powder, garlic powder, paprika, and slap yo mama seasoning. Set aside.

Egg Mixture

  • Mix eggs, franks red hot sauce, and buttermilk.
  • Remove chicken from the refrigerator after 30 minutes. Remove chicken one by one from buttermilk (removing as much buttermilk as you could to avoid a thick coating).
  • Dip chicken in egg mixture, then in flour, and fry for 12-15 minutes or until golden brown.

Finishing Touches

  • In a medium size pan, coat buns with butter and pan fry until golden brown.
  • Place chicken on buns with spicy mayo and pickles.

Notes

Enough to season 3-6 chicken breasts depending on the thickness. I used brioche buns and I'm unsure of the brand. I marinated the chicken for 30 minutes.
