Ingredients
  

For Pretzel Bites

  • 3 cups bread flour divided (plus additional as needed)
  • 3 Tablespoons light brown sugar firmly packed
  • 2 ¼ teaspoons rapid rise yeast
  • 1 teaspoon table salt
  • 2 Tablespoons unsalted butter melted
  • 1 cup warm water heated to 115F (46C)

For Boiling and Baking

  • 1 large egg
  • 1 teaspoon water
  • 8 cups water
  • ¼ cup baking soda
  • 1 Tablespoon Pretzel salt for sprinkling

Instructions
 

Preparing the Dough

  • In a large mixing bowl, combine approximately 2 cups of flour, brown sugar, yeast, and table salt and stir to combine.
  • Add melted butter and warm water and stir until mixture is completely combined and smooth.
  • Gradually add remaining flour until the dough begins to cling and pulls away from the bowl.
  • Transfer to a clean surface and briefly knead for 1-2 minutes until a smooth ball forms.
  • Place dough in a lightly oiled bowl, cover tightly, and let rise in a warm place for about 30 minutes.

Boiling & Baking

  • Preheat oven to 450F and line a baking sheet with parchment paper.
  • Prepare an egg wash by beating 1 egg with 1 teaspoon of water.
  • Measure 8 cups of water into a pot, stir in baking soda, and bring to a boil.
  • Deflate risen dough and transfer to a surface. Divide into 5 pieces and roll into 12" ropes.
  • Cut each rope into 1-1 ½" bite-sized pieces and transfer to the baking sheet.
  • Boil each handful of pretzel bites for about 30 seconds, then remove and return to the baking sheet.
  • Lightly brush pretzels with egg wash and sprinkle with pretzel salt.
  • Bake in the oven for 8-10 minutes or until golden brown. Allow to cool before serving.

Notes

Bread flour yields chewier pretzels. Coarse sea salt can substitute for pretzel salt if unavailable.
