Ingredients
  

For the Crust

  • 12 oz fettuccine pasta
  • 2 tablespoon olive oil
  • 4 cloves garlic, minced
  • ½ cup sun-dried tomatoes (oil-packed), chopped
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ¼ teaspoon red pepper flakes
  • Salt to taste
  • Black pepper to taste
  • Fresh basil for garnish

Preparation

  • Bring a large pot of salted water to a boil and cook fettuccine according to package directions until al dente. Reserve ½ cup pasta water before draining.
  • Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  • Stir in sun-dried tomatoes and cook for another minute. Add fresh spinach and cook until wilted, about 2-3 minutes.
  • Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and smooth.
  • Add drained fettuccine to the skillet, tossing to coat in the sauce. If needed, add reserved pasta water a little at a time to reach desired consistency.
  • Season with red pepper flakes, salt, and black pepper. Garnish with fresh basil before serving.
