Crispy seasoned chicken fried up with crunchy onions and spicy chillies - this recipe is a real flavour explosion!

Ingredients
  

  • 60 g cornflour (cornstarch)
  • 1 tablespoon table salt
  • 1.25 tablespoon ground black pepper
  • 1 tablespoon Chinese five-spice
  • 6 pieces skinless chicken thigh fillets, quartered
  • 240 ml vegetable oil for frying around 1 cup
  • 1 onion peeled and chopped into large chunks about 1.5-2cm across
  • 1 red chilli chopped into small pieces relatively mild fresno or serrano chillies
  • 1 green chilli chopped into small pieces relatively mild fresno or serrano chillies
  • 2 cloves garlic, peeled and minced
  • 3 pieces spring onions (scallions), roughly chopped

Instructions
 

  • Mix together the cornflour, ¾ tablespoon of the salt, 1 tablespoon of the black pepper, and the 1 tablespoon of Chinese five-spice.
  • Sprinkle over the chicken thigh fillets and toss together to coat.
  • Heat the vegetable oil in a large frying pan over a high heat until hot.
  • Add the chicken to the oil a piece at a time and fry for about 5-7 minutes, turning once until cooked through and golden brown all over.
  • Using tongs, transfer the chicken to a plate lined with kitchen paper.
  • Repeat with the second batch of chicken, then turn off the heat when done.
  • In a separate frying pan, heat the reserved tablespoon of oil over medium-high heat.
  • Add the chopped onion, chopped red and green chillies, remaining ¼ tablespoon of salt, and remaining ¼ tablespoon of black pepper. Fry for about 2-3 minutes.
  • Turn down the heat to medium and add the minced garlic and chopped spring onions. Fry for a further minute.
  • Add the chicken to the frying pan with onion and chillies in and toss everything together for 1 minute.
  • Turn off the heat and serve.

Notes

This recipe tastes best when cooked and eaten right away, but can be reheated. It is a salty dish; consider low sodium salt if desired.
