Ingredients
  

  • 2 cups fresh dragon fruit, chopped
  • 1 cup coconut milk
  • ¼ cup granulated sugar
  • 2 tablespoons lime juice
  • 1 tablespoon honey or agave syrup optional
  • 1 pinch salt

Instructions
 

  • Prepare the dragon fruit by cutting it in half and scooping out the flesh, then chop into smaller pieces.
  • In a blender, combine the chopped dragon fruit, coconut milk, sugar, lime juice, honey (if using), and salt. Blend until smooth.
  • Taste the mixture and adjust sweetness if needed.
  • Chill the blended mixture in the refrigerator for about 1 hour.
  • Pour into an ice cream maker and churn until soft-serve consistency or freeze in a shallow container for about 2 hours, stirring every 30 minutes until fluffy.
  • Serve immediately, garnished with additional dragon fruit or mint leaves if desired.
