Ingredients
  

One Bowl Chocolate Cupcakes

  • 1 Cup all-purpose flour 132g
  • ¾ Cup white granulated sugar 150g
  • Cup natural unsweetened cocoa powder 30g
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ Cup vegetable oil 60ml
  • 1 large egg room temperature
  • ½ teaspoon pure vanilla extract
  • ½ Cup buttermilk room temperature
  • ½ Cup hot coffee or hot water

Chocolate Buttercream

  • 1 Cup unsalted butter room temperature, 226g
  • 3 Cups powdered sugar 360g
  • ½ Cup natural unsweetened cocoa powder 45g
  • 3 tablespoon whole milk room temperature, 45ml
  • 2 teaspoon vanilla extract
  • ¼ teaspoon kosher salt

Instructions
 

Make The Chocolate Cupcakes

  • Preheat the oven to 350ºF/177ºC and line a cupcake pan with 12-15 liners.
  • Whisk all of the dry ingredients together in a large bowl to fully combine them. Add the vegetable oil, eggs, vanilla, and buttermilk and mix on low until combined. Add the hot coffee in a slow stream and continue mixing until fully combined and smooth, about 1-2 minutes.
  • Pour the batter into the prepared cupcake liners and bake for 15-18 minutes, until a toothpick inserted comes out clean. Cool completely before frosting.

Make The Chocolate Buttercream

  • In a stand mixer, whip the butter on high speed until creamy, about five minutes. Add the powdered sugar, cocoa powder, milk, vanilla extract, and salt on low speed until fully combined, 2-3 minutes.

Assembly

  • Let the cupcakes cool completely before frosting with chocolate buttercream. Use a piping tip to swirl the buttercream on top.

Notes

DIY Buttermilk: Add 1 tablespoon of white vinegar to a jar and top it with 1 Cup of whole milk. Stir and let sit for 15 minutes. Hot coffee will not add coffee flavor but amplifies the chocolate flavor.
