Ingredients
  

Vegetables

  • 1 large seedless cucumber chopped
  • 400 g cherry tomatoes halved
  • 0.5 medium red onion sliced
  • 0.5 cup olives
  • 0.5 cup feta cheese crumbled
  • 0.5 cup parsley chopped

Dressing

  • 0.5 medium lemon juiced
  • 3 tablespoons extra virgin olive oil
  • 0.5 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 0.5 teaspoon coarsely ground black pepper

Instructions
 

Preparation

  • Start by stirring together the ingredients for the dressing in a small bowl, set aside.
  • In a salad bowl, add all the chopped vegetables, olives, parsley and half the feta cheese.
  • Pour over the dressing and gently mix. Top with the remaining feta cheese and serve immediately.
