Vegetables

  • 1 each English cucumber cut into ½ inch half moons
  • 4 each Roma tomatoes cut in half and then cut into ½ inch pieces
  • ½ each red onion cut into thin slices

Other Ingredients

  • 1 cup kalamata olives pitted and cut in half
  • 4 ounces feta cheese cut into ½ inch cubes
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Greek oregano
  • ½ teaspoon kosher salt
  • dash freshly ground black pepper

Instructions
 

Preparation Steps

  • Combine the cucumbers, tomatoes, onion, and feta in a large bowl.
  • Season with the olive oil, red wine vinegar, oregano, salt and pepper.
  • Toss to combine and serve.
