  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breast, cut into bite-size pieces
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 1 teaspoon dried Italian herbs
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 16 ounces potato gnocchi
  • 2 cups baby spinach
  • ½ cup grated Parmesan cheese
  • Salt and black pepper to taste

Cooking Instructions

  • Heat olive oil in a large pot over medium heat. Add the chicken pieces and cook until browned and cooked through. Remove chicken and set aside.
  • Add diced onion to the pot and sauté until softened, about 3 minutes. Stir in garlic and sun-dried tomatoes, cooking for another minute.
  • Sprinkle in dried Italian herbs, then pour in chicken broth and bring to a simmer. Add the cooked chicken back to the pot.
  • Stir in heavy cream and gnocchi. Cook for 5-7 minutes until gnocchi are tender and floating.
  • Add spinach and Parmesan cheese. Simmer for 2 minutes until spinach wilts. Season with salt and pepper to taste.
  • Serve hot, garnished with extra Parmesan if desired.
