Ingredients
  

  • 20 ounces frozen mango chunks (2 bags, about 5 cups)
  • cup liquid sweetener of choice such as maple syrup, honey, or agave nectar
  • 2 tablespoons freshly squeezed lime juice (from 1 medium lime)
  • ¼ teaspoon kosher salt

Instructions
 

  • Let the frozen mango chunks sit at room temperature for 10 minutes to take the chill off, but do not thaw completely.
  • Process the mango, liquid sweetener, lime juice, and kosher salt in a food processor until the mixture is smooth and creamy, about 4 to 5 minutes.
  • Serve immediately for soft-serve consistency, or transfer to an airtight container and freeze until solid, about 2 to 3 hours.

Notes

If using a loaf pan, wrap the entire pan in plastic wrap to prevent ice crystals from forming.
