Ingredients
  

  • 3 cups cooked chicken breast, shredded
  • 4 cups cauliflower rice
  • 1 cup sour cream
  • 1.5 cups shredded cheddar cheese divided
  • 1 cup cooked bacon crumbled
  • 0.5 cup chopped green onions
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Instructions
 

  • Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch casserole dish.
  • In a large mixing bowl, combine cauliflower rice, shredded chicken, sour cream, 1 cup of cheddar cheese, half of the crumbled bacon, green onions, garlic powder, salt, and black pepper.
  • Spread the mixture evenly into the prepared casserole dish.
  • Top with the remaining cheddar cheese and bacon.
  • Bake for 30–35 minutes or until the casserole is heated through and cheese is melted and bubbly.
  • Allow to cool slightly. Serve warm, garnished with additional green onions if desired.
