- 3 cups cooked chicken breast, shredded
- 4 cups cauliflower rice
- 1 cup sour cream
- 1.5 cups shredded cheddar cheese divided
- 1 cup cooked bacon crumbled
- 0.5 cup chopped green onions
- 0.5 teaspoon garlic powder
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch casserole dish.
In a large mixing bowl, combine cauliflower rice, shredded chicken, sour cream, 1 cup of cheddar cheese, half of the crumbled bacon, green onions, garlic powder, salt, and black pepper.
Spread the mixture evenly into the prepared casserole dish.
Top with the remaining cheddar cheese and bacon.
Bake for 30–35 minutes or until the casserole is heated through and cheese is melted and bubbly.
Allow to cool slightly. Serve warm, garnished with additional green onions if desired.
