Ingredients
  

For the curry roux

  • 3 tablespoon unsalted butter
  • 5 tablespoon all-purpose flour
  • 2 tablespoon S&B curry powder

For the curry udon

  • 4 servings udon noodles
  • 1 lb very thinly sliced meat (beef, pork, or chicken) defrosted
  • 2 large carrots peeled and cut into ½” pieces
  • 1 medium white onion thinly sliced lengthwise
  • 5 cups broth of choice (chicken broth recommended)
  • 1 cup broth or hot water to thin out consistency if desired
  • 1 packet instant dashi optional
  • 1 tablespoon soy sauce
  • 1 tablespoon mirin
  • 2 tablespoon honey more or less to taste
  • 15 g dark chocolate optional, in small squares
  • Salt to taste
  • Oil for cooking (avocado oil recommended)

For serving

  • chopped scallions

Cooking Steps

  • Make the curry roux: Melt butter in a small pot over medium-low heat. Whisk in flour and cook until golden brown, about 10-12 minutes. Add curry powder and whisk well, cooking for 30 seconds more. Remove from heat.
  • Boil pot of water for udon: Bring a large pot of water to a boil for blanching udon.
  • Sauté meat and vegetables: Heat a pot over medium-high heat. Add oil and meat, sauté until done. Set aside. Add carrots and onions to the pot, sauté until tender.
  • Add remaining curry ingredients: Add broth, instant dashi (if using), soy sauce, and mirin. Bring to a simmer. Add dark chocolate (if using) and curry roux, stirring until incorporated.
  • Simmer low uncovered for 3 minutes until slightly thickened. Check consistency and adjust with more broth or hot water if needed.
  • Turn heat to very low and add back cooked meat to heat through.
  • Cook udon: Blanch udon according to package directions, usually for about a minute.
  • Serve: Divide noodles among bowls, ladle curry on top, and garnish with scallions.

Notes

This homemade curry roux avoids additives found in store-bought versions and is easy to make. Adjust sweetness and consistency to taste.
