For the Cupcakes

  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cups unsalted butter (softened)
  • 1 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cups buttermilk
  • 1 cups peach preserves

For the Frosting and Topping

  • 0.5 cups cream cheese (softened)
  • 0.25 cups powdered sugar
  • 1 tablespoon milk
  • 0.5 cups fresh peaches (diced)
  • 2 tablespoons honey for drizzle
  • sugar crystals for garnish

Instructions
 

Baking

  • Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  • In a medium-sized bowl, whisk together flour, baking powder, baking soda, and salt.
  • In a large bowl, beat softened butter and granulated sugar until light and fluffy.
  • Add eggs one at a time, beating thoroughly after each addition, then stir in vanilla extract.
  • Alternately mix the dry ingredients and buttermilk into the butter mixture until just combined.
  • Spoon the batter into the muffin tin, adding a dollop of peach preserves to each, and cover with more batter.
  • Bake for 18-20 minutes, until a toothpick comes out clean. Let cool for a few minutes, then transfer to a wire rack.
  • Beat cream cheese, powdered sugar, and milk in a small bowl until smooth to prepare the frosting.
  • Frost the cooled cupcakes, top with diced peaches, drizzle with honey, and sprinkle with sugar crystals.

Notes

Substitute buttermilk with a mixture of milk and lemon juice if needed. Add nuts or cinnamon for extra flair.
