Ingredients
  

  • 1 package kielbasa sausage, sliced 13 oz
  • ½ pound Yukon gold potatoes, halved or quartered
  • 1 yam or sweet potato, peeled and chopped
  • 1 small red onion, sliced
  • 1 head broccoli florets, chopped
  • 1-2 tablespoons olive oil for drizzling
  • 1 teaspoon Kosher salt
  • ½ teaspoon freshly ground black pepper
  • 3 tablespoons olive oil for sauce
  • 2 tablespoons honey
  • 1 ½ tablespoons brown sugar
  • 4 cloves garlic, minced
  • ½ teaspoon Kosher salt for sauce
  • 1 tablespoon Dijon mustard
  • ½ teaspoon dried thyme

Instructions
 

  • Preheat the oven to 400°F.
  • Add the potatoes, sweet potatoes, red onion, and Kielbasa to the pan and drizzle with olive oil. Season with salt and pepper and toss to coat.
  • In a small bowl, whisk together all of the sauce ingredients - olive oil, honey, brown sugar, garlic, salt, mustard, and thyme. Brush Kielbasa with sauce, reserving 2 tablespoons for serving.
  • Bake for 20 minutes in preheated oven. Add broccoli and continue baking until bright green and tender, about 10 minutes.
  • Remove from oven, drizzle sausage and veggies with remaining sauce and serve. Enjoy!
