- 1 package kielbasa sausage, sliced 13 oz
- ½ pound Yukon gold potatoes, halved or quartered
- 1 yam or sweet potato, peeled and chopped
- 1 small red onion, sliced
- 1 head broccoli florets, chopped
- 1-2 tablespoons olive oil for drizzling
- 1 teaspoon Kosher salt
- ½ teaspoon freshly ground black pepper
- 3 tablespoons olive oil for sauce
- 2 tablespoons honey
- 1 ½ tablespoons brown sugar
- 4 cloves garlic, minced
- ½ teaspoon Kosher salt for sauce
- 1 tablespoon Dijon mustard
- ½ teaspoon dried thyme
Preheat the oven to 400°F.
Add the potatoes, sweet potatoes, red onion, and Kielbasa to the pan and drizzle with olive oil. Season with salt and pepper and toss to coat.
In a small bowl, whisk together all of the sauce ingredients - olive oil, honey, brown sugar, garlic, salt, mustard, and thyme. Brush Kielbasa with sauce, reserving 2 tablespoons for serving.
Bake for 20 minutes in preheated oven. Add broccoli and continue baking until bright green and tender, about 10 minutes.
Remove from oven, drizzle sausage and veggies with remaining sauce and serve. Enjoy!
