Honey Chocolate Chip Cookies (No Refined Sugar)

Ingredients
  

  • ½ cup Nude Bee Honey
  • 1 cup butter, softened room temperature, not microwaved
  • 1 teaspoon vanilla extract
  • 1 egg room temperature
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda please use a fresh box to ensure a fluffy cookie!
  • ¼ teaspoon salt
  • ¾ cup chocolate chips

Instructions
 

  • In the bowl of a stand mixer, add butter and honey. Beat until light and fluffy, about 5 minutes. Pour in egg and vanilla and mix until well combined.
  • In a small bowl, sift together flour, baking soda, and salt. Gradually add to the butter mixture, mixing until just combined. Stir in the chocolate chips.
  • Preheat oven to 350F. Line a baking sheet with parchment paper or silicone liner.
  • Measure out one tablespoon-sized portions and roll into balls. Continue doing this until no dough remains. Place tray in refrigerator and allow to sit for 10 minutes minimum.
  • Bake 12 cookies at a time, spread evenly apart, for about 10-11 minutes, or until slightly golden. Remove from oven and allow to cool for 5 minutes on the tray before moving to a cooling rack.

Notes

If you do not use fresh baking soda, you will notice a difference when it comes to thickness of the cookies.
