Ingredients
  

Sponge Cake or Lady Fingers

  • 1 cup Pistachio Cream see recipe link
  • 8-10 tablespoons milk divided, use 2%

Mascarpone Filling

  • 1 large egg optional
  • 2 tablespoons granulated sugar or use powdered sugar instead
  • 1.5 cups whole/whipping/heavy cream
  • 1.5 cups mascarpone

Preparation

  • Prepare the Sponge Cake or Lady Fingers (15-20) as per the recipe link.
  • Blend the Pistachio Cream with 3-4 tablespoons of milk until creamy.
  • Cut the cooled cake into two layers, drizzle with milk, and spread half the pistachio cream.
  • Make the mascarpone filling by beating together the egg and sugar, then adding the cream and mascarpone.
  • Top with mascarpone filling, refrigerate for 3-4 hours or overnight before serving.
  • Sprinkle with chopped pistachios before serving, if desired.

Notes

The dessert should be kept in the fridge in an airtight container for 2-3 days or frozen for up to two weeks. Thaw overnight in the fridge before serving.
