How to Make Gummy Peach Rings
In a small saucepan, mix together peach juice and lemon juice over low heat. Stir gently and avoid boiling to preserve the flavor, heating just until warm.
Sprinkle the gelatin over the warm juice mixture. Allow it to bloom for about 3-5 minutes.
Once bloomed, whisk the mixture until the gelatin is completely dissolved. Gradually add granulated sugar, tasting to adjust sweetness.
If using, mix in a few drops of food coloring to enhance visual appeal.
Carefully pour the gelatin mixture into silicone ring molds, using a dropper for precision.
Refrigerate the filled molds for at least 2 hours, until the gummies are firm.
Once set, gently remove the gummy rings from the molds. Toss them in a mixture of coating sugar and citric acid for a sweet and sour experience!
