Ingredients
  

For the Casserole

  • 0.5 tablespoon bacon fat or butter
  • 1 small onion, chopped
  • 1 can (10.5 ounce) condensed cream of mushroom soup original Great for Cooking version recommended
  • 0.5 can whole milk using the soup can
  • 0.5 teaspoon Creole or Cajun seasoning optional, or to taste
  • 0.25 teaspoon freshly cracked black pepper
  • 2 tablespoons sliced almonds optional
  • 2 cans (14.5 ounce) French style green beans drained well
  • Kosher salt to taste

For the Topping

  • 0.5 sleeve Ritz crackers crushed
  • 2 tablespoons butter melted

  • Preheat oven to 350 degrees F. Butter a 1-½ quart casserole dish with butter or spray with non-stick spray; set aside.
  • Microwave the green beans (unless you are using canned) according to package directions; drain.
  • Melt ½ tablespoon of bacon fat in a skillet over medium heat and saute the onion until soft, but not browned.
  • Add the soup, milk, Creole or Cajun seasoning, pepper, almonds, and the cooked green beans; toss over medium heat until warmed and smooth. Taste, add salt if needed. Transfer to the prepared baking dish.
  • Combine the cracker or bread crumbs with the butter and Parmesan, and add to the top of the casserole.
  • Bake, uncovered, at 350 degrees F for about 25 to 30 minutes or until bubbly.

Notes

Double for a 9 x 13 inch dish. May substitute 1 pound package frozen green beans, cut or French style, cooked, or well drained cut green beans. Use ¼ cup standard or panko breadcrumbs instead of the cracker crumbs. Add ¼ cup grated Parmesan cheese to the bread crumbs. If you prefer, bake first, then add the topping, and run under the broiler to brown.
