Ingredients
  

Sweet Potatoes

  • 2 large sweet potatoes Choose sweet potatoes with smooth skin.

Coating Mixture

  • 3 large eggs beaten
  • 1 cup Parmesan cheese grated
  • 1 teaspoon salt
  • 1 teaspoon coarse ground pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • ¼ teaspoon cayenne pepper

Instructions
 

Preparation

  • Preheat oven to 450° Fahrenheit.
  • Wash and quarter sweet potatoes.
  • Beat eggs in medium bowl and set aside.
  • Mix together Parmesan, salt, pepper, garlic powder, parsley, oregano, and paprika in a bowl.
  • Dip each potato wedge in beaten eggs, then in Parmesan mixture. Shake off excess seasoning.
  • Arrange potatoes in a single layer on foil lined baking sheet.
  • Bake for 20 minutes or until coating is golden brown. Remove from oven and serve.

Notes

Scrub your potatoes well; this softens the skin. Thicker wedges make for softer potatoes; thinner = crispier. Use a zip top bag to easily season your potato wedges. Shake off excess coating before baking.
