Ingredients
  

Cheese Mixture

  • 3.5 cups grated cheddar cheese
  • 0.75 cup monterey jack cheese, grated
  • 0.5 cup grated parmesan cheese
  • 0.5 cup real mayonnaise Do not use low-fat mayonnaise.
  • 4 green onions white and light green parts minced

Bread and Garlic

  • 1 loaf crusty French bread
  • 0.5 cup butter (1 stick), divided
  • 4 cloves garlic finely minced, divided

Instructions
 

Preparation

  • In a medium bowl, mix the cheddar, monterey jack, parmesan with the mayonnaise and green onion. Add dash of salt to taste and set aside.
  • Cut the loaf of bread in half, then cut each half into half again.
  • Melt 2 tablespoons of butter in a skillet and add one-fourth of the minced garlic. Place one piece of bread face down in the skillet.
  • Allow the bread to toast in the skillet, removing the garlic if it starts to get too brown. Repeat with remaining butter, garlic, and bread.
  • Spread the cheese mixture on the toasted loaves and bake in a 425°F oven until the cheese is hot and bubbly, about 10 minutes.
  • Slice and serve.

Notes

For extra toastiness, turn on the broiler for a minute at the end.
