Ingredients
  

Poultry

  • 4 escalopes chicken

Grains

  • 400 g round rice

Canned Goods

  • 200 g canned crushed tomatoes

Vegetables

  • 100 g peas fresh or frozen depending on the season
  • 2 yellow onion

Spices and Herbs

  • 2 garlic cloves
  • 1 juice lime
  • 3 sprigs coriander

Soups and Stocks

  • 2 cubes bouillon

Instructions
 

Preparation

  • Cut the chicken fillets into small cubes and place them in a dish. Add some chopped coriander, lime juice, and two crumbled bouillon cubes. Drizzle with a bit of olive oil and 100 ml of water. Mix and place in the fridge for 1 hour.
  • Finely chop the onions. Remove the garlic cloves and press them.

Cooking

  • Heat a skillet with 1 tablespoon of olive oil and brown the chicken and its marinade. Add the garlic and onion and cook over medium heat for a few minutes, stirring.
  • Add the rice, crushed tomatoes, and peas. Mix well and cover with 800 ml of boiling water (optional: you can infuse some saffron in the boiling water).
  • Cook at a gentle simmer for about 15 minutes, until the rice is cooked. Adjust the seasoning and serve hot!

Notes

This dish is perfect for family gatherings and can easily be adjusted with different vegetables or herbs.
