Ingredients
  

The Vegetables

  • 2 pounds combination of cauliflower florets, green beans, carrots, pickling cucumbers, red bell pepper, and/or sweet onions more or less
  • 1-2 jalapeño, Serrano, or red chili peppers optional for spicy veggies

The Herbs/Spices

  • 6-8 sprigs fresh dill may substitute 1 teaspoon dried dill
  • 1 teaspoon celery seeds
  • 1 teaspoon coriander seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon black peppercorns

The Brine

  • 4 cups water
  • 8 cloves garlic peeled and left whole
  • 2 cups distilled white vinegar 5% acidity
  • ¼ cup granulated sugar may reduce amount
  • 2 tablespoons kosher salt

Instructions
 

Preparation

  • Cut the cauliflower into small, bite-size florets and slice the carrots into thick rounds. Trim green beans and leave whole. Remove the blossom end from cucumbers and slice thickly. Peel and slice the onions into rings or half moons. Chop or slice the bell peppers into strips.
  • In clean quart-size canning jars, place a few sprigs of fresh dill, then pack jars with desired mix of raw veggies. Add hot pepper to each jar. Divide seeds and peppercorns between jars.
  • In a saucepan, bring water to a boil, then reduce heat to simmer. Add garlic and simmer for 5 minutes. Add vinegar, sugar, and salt, then return to a boil until dissolved.
  • Remove garlic, placing 4 cloves in each jar. Fill jars with hot brine. Use a measuring cup or ladle for easy transfer.
  • Let vegetables cool, then cover and refrigerate. Pickles taste good after one day, improving over several days. They last 2-3 months but are unlikely to last that long.

Notes

Depending on the vegetables chosen and their preparation, there may be leftover vegetables. Additional veggies can be added to the brine. Fresh dill or dried can be used, with fresh providing a stronger flavor. Adjust sugar to taste if desired.
