- 1 cup Orzo choose a medium grain shape
- 1 cup Brown or green lentils rinse well
- 4 cups Fresh spinach leaves
- 28 oz Canned crushed tomatoes use high-quality
For the Aromatics & Flavor
- 1 medium Onion finely chopped
- 3 cloves Garlic minced
- 2 tablespoon Olive oil for sautéing
- 4 cups Vegetable broth for cooking
For Seasoning
- 1 tablespoon Dried oregano
- 1 teaspoon Red pepper flakes to taste
- 1 teaspoon Salt to taste
- 1 teaspoon Black pepper to taste
Steps to Cook
Heat olive oil over medium heat, add chopped onion and garlic, and cook until softened and fragrant, about 3–4 minutes.
Stir in rinsed lentils, crushed tomatoes, vegetable broth, oregano, red pepper flakes, salt, and pepper. Bring to a gentle boil, about 5 minutes.
Add orzo pasta, reduce heat to low, cover, and simmer for 12–15 minutes until lentils are tender and orzo is al dente.
Remove lid, stir in fresh spinach until wilted, about 2 minutes. Adjust seasoning to taste.
Turn off heat, let dish rest for 2 minutes, then fluff gently with a fork and serve.
