Cooking Steps

  • Rinse 1 cup of long grain white rice under cold water until the water runs clear, and trim fresh green beans into bite-size pieces.
  • Heat 2 tablespoons of olive oil in your pot over medium heat, add minced garlic cloves, and cook for about 1 minute until fragrant and just starting to turn golden.
  • Add drained rice to the garlic oil, stirring constantly for about 2 minutes until grains look translucent and slightly toasted.
  • Pour in broth, lemon juice, and zest, season with salt and pepper; stir gently to combine.
  • Arrange trimmed green beans evenly atop the rice, bring pot to a gentle boil, cover, and reduce heat to low; cook 15–20 minutes until liquid absorbs and beans turn tender-crisp.
  • Remove pot from heat, keep it covered, and let rest for 5 minutes. Then remove lid and gently fluff rice with a fork.
  • Transfer to a serving dish, garnish with chopped parsley or Parmesan, and enjoy.
