Method

  • Preheat your oven to 350°F and line an 8×8-inch baking pan with parchment paper.
  • In a large bowl, stir together rolled oats, whole wheat flour, baking powder, ground cinnamon, and salt until combined.
  • In another bowl, whisk tahini, honey or maple syrup, egg, and vanilla extract until smooth and glossy.
  • Press half of the oat mixture into the prepared pan, creating an even layer.
  • Toss chopped apples with lemon juice and brown sugar in a bowl.
  • Spread the apple mixture over the oat base and sprinkle the remaining oat mix on top.
  • Bake for 25–30 minutes or until the top is golden brown.
  • Let the pan rest for 15 minutes, then lift squares out using the parchment overhang and cool completely before slicing.
