  • 1 cup Unsalted Butter softened at room temperature
  • ½ cup Powdered Sugar sifted
  • 1 cup Finely Chopped Pistachios roasted for enhanced flavor
  • 2 cups All-Purpose Flour do not over-mix
  • 1 teaspoon Vanilla Extract pure
  • ¼ teaspoon Salt a pinch balances flavors

For Garnish

  • ¼ cup Chopped Pistachios for garnish

Directions

  • Preheat the oven to 325°F (163°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, beat the softened unsalted butter and powdered sugar until smooth and creamy.
  • Stir in the vanilla extract and a pinch of salt.
  • Gradually add the all-purpose flour, mixing until just combined.
  • Gently fold in the finely chopped pistachios.
  • Roll the dough into 1-inch balls and place on the prepared baking sheet.
  • Sprinkle additional chopped pistachios on top of each cookie.
  • Bake for 12-15 minutes, or until the edges are lightly golden.
  • Let the cookies cool on the baking sheet for about 5 minutes, then transfer to a wire rack.
