  • 4 pieces boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 1 cup sun-dried tomatoes (packed in oil, drained and chopped)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup spinach fresh
  • 1 tablespoon olive oil
  • 1 tablespoon garlic minced
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Pepper to taste
  • Grated Parmesan cheese for serving
  • Fresh basil for garnish (optional)

Instructions
 

  • Season the chicken breasts with salt, pepper, and Italian seasoning on both sides.
  • In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook until golden brown, about 5-7 minutes per side. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the minced garlic and sauté for about 1 minute, until fragrant.
  • Pour in the chicken broth and stir in the orzo. Bring to a simmer, then cover and cook for about 10 minutes, or until the orzo is tender.
  • Once the orzo is cooked, reduce the heat and stir in the heavy cream and sun-dried tomatoes. Mix well until combined.
  • Return the chicken to the skillet, nestling it into the creamy orzo. Add fresh spinach and let it wilt in the sauce for a couple of minutes.
  • Once everything is heated through, garnish with grated Parmesan cheese and fresh basil if desired.
