Ingredients
  

  • 250 g lamb mince
  • 180 g dry ribbon noodles, cooked
  • 6 spring onions, finely chopped
  • 3 garlic cloves, grated
  • 5 g ginger, grated
  • 0.75 teaspoon ground cumin
  • 0.75 teaspoon ground coriander
  • 1 tablespoon chilli oil
  • 1 tablespoon light soy
  • 1 tablespoon dark soy
  • 0.5 tablespoon white wine vinegar
  • 2 teaspoon sesame seeds
  • Oil for frying

Instructions
 

  • Cook the noodles according to packet instructions.
  • In a large frying pan over a high heat, add 1-2 tablespoon of oil then the lamb mince. Cook until browned, about 5 minutes.
  • Add ½ of the spring onion and fry for another 3 minutes.
  • Add the garlic, ginger and spices. Cook for 2 minutes. Stir often.
  • Add soy sauces, vinegar and chilli oil. Stir to combine.
  • Add the cooked noodles and stir to coat the noodles with the lamb and sauce.
  • Stir in the remaining spring onions and sesame seeds.

Notes

This recipe is a quicker and easier version of a Northern Chinese specialty.
