Ingredients
  

For the Patties

  • 2 medium sweet potatoes peeled and cubed
  • 1 cup red lentils rinsed
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • to taste salt
  • to taste pepper
  • 2 tablespoons olive oil for frying
  • ¼ cup fresh cilantro chopped

Cooking Instructions

  • Boil the sweet potatoes in a pot of water until tender, about 10-15 minutes. Once soft, drain and mash them in a large bowl until smooth.
  • In a separate pot, cook the red lentils in water until they’re soft, about 15 minutes. Drain and add to the mashed sweet potatoes, combining well.
  • Stir in the chopped onion, minced garlic, cumin, coriander, salt, and pepper. Mix everything until well combined.
  • Using your hands, form the mixture into patties of your desired size.
  • In a skillet, heat the olive oil over medium heat. Once hot, carefully place patties in the pan, cooking for 3-4 minutes on each side until golden brown and crispy.
  • Enjoy the patties warm, paired with a creamy avocado cilantro sauce.
