For the Patties
- 2 medium sweet potatoes peeled and cubed
- 1 cup red lentils rinsed
- 1 small onion finely chopped
- 2 cloves garlic minced
- 1 teaspoon cumin
- 1 teaspoon coriander
- to taste salt
- to taste pepper
- 2 tablespoons olive oil for frying
- ¼ cup fresh cilantro chopped
Cooking Instructions
Boil the sweet potatoes in a pot of water until tender, about 10-15 minutes. Once soft, drain and mash them in a large bowl until smooth.
In a separate pot, cook the red lentils in water until they’re soft, about 15 minutes. Drain and add to the mashed sweet potatoes, combining well.
Stir in the chopped onion, minced garlic, cumin, coriander, salt, and pepper. Mix everything until well combined.
Using your hands, form the mixture into patties of your desired size.
In a skillet, heat the olive oil over medium heat. Once hot, carefully place patties in the pan, cooking for 3-4 minutes on each side until golden brown and crispy.
Enjoy the patties warm, paired with a creamy avocado cilantro sauce.
