  • 12 oz Rigatoni pasta
  • 1 lb Beef sirloin or stew meat cut into bite-sized pieces
  • Salt and pepper to taste
  • 2 tablespoons Olive oil
  • 1 small Diced onion
  • 3 cloves Minced garlic
  • 1 cup Beef broth
  • 1 cup Heavy cream
  • ½ cup Grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Fresh parsley chopped, for garnish

Cooking Steps

  • Start by boiling a large pot of salted water. Add the rigatoni and cook until al dente. Drain the pasta, reserving about ½ cup of pasta water, and set it aside.
  • Season the beef generously with salt and pepper. Heat a large skillet over medium-high heat, add olive oil, and sear the beef in a single layer for 2-3 minutes per side until browned.
  • In the same skillet, sauté diced onion over medium heat until translucent, about 3-4 minutes. Add minced garlic and stir for another 1-2 minutes.
  • Deglaze the skillet with beef broth, then stir in heavy cream, grated Parmesan cheese, and Italian seasoning. Reduce heat and simmer for 5-7 minutes until slightly thickened.
  • Return the seared beef and toss in the cooked rigatoni until fully coated in sauce. Add reserved pasta water to adjust consistency if needed.
  • Garnish with freshly chopped parsley and serve immediately, optionally with extra Parmesan cheese on the side.

Notes

Use freshly grated Parmesan for the best flavor. Adjust sauce consistency with reserved pasta water if needed. Leftovers taste even better the next day.
