Ingredients
  

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 can (14 ounces) coconut milk
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon curry powder
  • ½ teaspoon turmeric
  • to taste Salt and pepper
  • Fresh cilantro for garnish
  • Cooked rice or quinoa for serving

Instructions
 

  • Cut the chicken breasts into bite-sized pieces and season with salt and pepper.
  • In a large skillet, heat the olive oil over medium heat.
  • Add the diced onion to the skillet and sauté until translucent, about 3-4 minutes.
  • Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  • Add the seasoned chicken pieces to the skillet. Cook until browned and cooked through, about 5-7 minutes.
  • Pour in the coconut milk, stirring to combine with the chicken and onion mixture.
  • Stir in the soy sauce, lime juice, curry powder, and turmeric. Mix well and bring to a gentle simmer.
  • Allow the sauce to simmer for about 10 minutes, stirring occasionally until it thickens slightly.
  • Taste and adjust seasoning with salt and pepper as needed.
  • Remove from heat and garnish with fresh cilantro before serving.

Notes

Serve with cooked rice or quinoa for a complete meal.
