This easy Chicken Cordon Bleu recipe has ham and cheese rolled up in chicken, then rolled in a crunchy coating and topped with a simple sauce.

Ingredients
  

Meat

  • 4 pieces boneless skinless chicken breasts about 2 pounds
  • 8 slices ham thin slices

Cheese

  • 8 oz Swiss cheese sliced or shredded

Seasoning

  • salt to taste
  • freshly ground black pepper to taste

Coating

  • 3 cups corn flakes cereal crushed (or substitute breadcrumbs)
  • 6 Tablespoons butter melted

Sauce

  • 1 cup mayonnaise
  • 1-2 teaspoons yellow mustard to taste

Instructions
 

Preparation

  • Pat the chicken dry with paper towels. Cut each chicken breast in half horizontally to create two halves.
  • Place chicken breast halves between two sheets of plastic wrap and pound them into thin pieces.
  • Top each piece of chicken with a slice of ham and a handful of shredded cheese. Roll tightly and wrap them in plastic wrap.
  • Refrigerate the wrapped chicken bundles for at least 30 minutes.
  • Preheat oven to 400 degrees F. Remove chicken from fridge, unwrap, and season with salt and pepper.
  • Crush cornflakes in a food processor and transfer them to a shallow dish. Melt butter in another shallow dish.
  • Dip chicken bundles in melted butter and then into cornflake crumbs, pressing lightly.
  • Transfer to a greased baking sheet and bake for about 30 minutes, until chicken is cooked through.
  • To make the sauce, stir mayo and mustard together. Adjust mustard to taste.

Notes

Variations include using different cheeses, swapping cornflakes for breadcrumbs, and alternative sauce recipes. You can refrigerate wrapped chicken for one day or freeze for up to three months.
