Ingredients
  

Chicken

  • 1 lb chicken breast boneless, skinless
  • 2 tablespoon olive oil
  • 3 cloves garlic minced or ½ teaspoon garlic powder
  • 1 tablespoon Italian seasoning
  • ¼ teaspoon salt
  • ½ teaspoon black pepper

Casserole

  • 1 tablespoon olive oil
  • 2 cups fresh spinach
  • 8 oz cream cheese
  • ½ cup mozzarella cheese shredded

Instructions
 

Preparation

  • Preheat the oven to 400F
  • Place the chicken in a medium mixing bowl and cover with olive oil, garlic, Italian seasoning, salt, and pepper
  • Stir it up to cover the chicken
  • Place in the refrigerator and marinate while preparing the rest of the casserole
  • Meanwhile, prepare the spinach by placing a tablespoon of olive oil in a large skillet over medium heat
  • Add the spinach and stir frequently until it has wilted
  • Lightly grease an 8×8 glass baking dish and place the chicken in it
  • Cover the chicken with the cream cheese
  • Place a layer of spinach on top of the cream cheese
  • Top everything with shredded mozzarella cheese
  • Bake the casserole for about 20-30 minutes, until the chicken is cooked through
