Ingredients
  

Taco Ingredients

  • 6 pieces thin corn tortillas 5 to 6-inch wide
  • ½ cup refried beans
  • ½ teaspoon chili powder optional
  • 1 ½ cups Mexican-style blend shredded cheese
  • ½ cup salsa for serving
  • ½ cup sour cream for serving
  • ½ cup guacamole for serving

Baking Instructions

  • Preheat the oven to 450°F. Arrange a rack in the center of the oven. Line a baking sheet with parchment paper.
  • Spread refried beans on one side of each tortilla and arrange on a platter. Dust with chili powder if using. Line preheated baking sheet with parchment and spray with cooking spray.
  • Arrange tortillas bean side up on the baking sheet. Top each with about ¼ cup cheese.
  • Bake until cheese has melted, about 1 to 2 minutes. Fold each tortilla to form tacos and press down lightly.
  • Return to the oven and bake until crispy on the bottom, 5 to 7 minutes. Flip and cook until gooey and crispy, another 5 to 7 minutes.
  • Let cool for a few minutes. Serve with salsa, sour cream, and/or guacamole.

Notes

Cheesy baked tacos are best served fresh. Leftovers can be reheated in a 350°F oven or in the air fryer.
