Main Ingredients

  • 1 kg oven chips
  • 250 g streaky bacon, chopped
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 cup milk

To Serve

  • 1 cup grated cheese
  • ½ cup sour cream
  • 2 tablespoon fresh chives, chopped

Cooking Instructions

  • Cook the oven chips according to the packet instructions. While the chips are cooking, prepare the sauce.
  • In a large frying pan, cook the bacon for 10-15 minutes until the fat has rendered and the bacon is golden. Remove from the pan and set aside.
  • In the same pan, add the butter and melt together with the bacon grease. Sprinkle over the flour and cook off for 1 minute.
  • Pour the milk into the pan, stirring as you go. Once the mixture starts to thicken, take the pan off the heat and add the cheese. Season to taste with salt and pepper, mix to combine.
  • Finely chop the cooled bacon pieces. Add half of the bacon back into the cheese sauce.
  • Remove the hot chips from the oven. Place in a serving dish, or leave in the tray.
  • Pour over the cheese and bacon sauce. Drizzle over the sour cream then top with remaining chopped bacon and chives.

Notes

These fries make for an excellent side dish for gatherings or a comforting snack.
