Spices

Pork Chops
- 4 pieces center-cut, bone-in pork rib chops (10 to 12 ounces each) about 1-inch thick
Butter & Herbs
- 4 tablespoons unsalted butter divided
- 2 sprigs fresh rosemary plus more for garnish
Sauce Ingredients
- ¼ cup packed light or dark brown sugar
- 2 tablespoons water
- 2 tablespoons soy sauce or tamari
Cooking Instructions
Stir paprika, kosher salt, and black pepper together in a small bowl. Pat pork chops dry with paper towels, then season all over with the spice mixture.
Melt 1 tablespoon of unsalted butter in a large skillet over medium-high heat. Add 2 pork chops and cook until browned and internal temperature reaches 145°F, 4 to 5 minutes per side. Transfer to a plate and repeat with remaining pork chops.
Reduce heat to low. Add remaining butter, rosemary, brown sugar, water, soy sauce, and any accumulated juices from the pork chops. Cook, stirring, until butter melts and sauce thickens slightly, about 1 minute.
Serve the pork chops with the sauce spooned over the top, garnished with more rosemary leaves if desired.
