Ingredients
  

Filling

  • 0.5 cup unsalted butter 113 grams
  • 6 cups frozen sliced peaches (No need to thaw)
  • 0.5 cup granulated sugar 100 grams
  • 0.5 cup dark brown sugar 100 grams
  • 1 teaspoon fine sea salt
  • 1 teaspoon cinnamon
  • 0.5 teaspoon nutmeg
  • 0.5 teaspoon cardamom
  • 0.25 teaspoon ginger
  • 0.25 teaspoon cloves
  • 1 tablespoon cornstarch
  • 2 tablespoons bourbon (optional)
  • 1 teaspoon vanilla
  • 2 tablespoons fresh lemon juice (about half a medium lemon)

Batter

  • 2 cups granulated sugar 400 grams
  • 2 cups all-purpose flour 254 grams
  • 1 teaspoon fine sea salt
  • 3 teaspoons baking powder
  • 2 cups buttermilk
  • cinnamon sugar to dust top of batter before baking (optional)

Instructions
 

Preparation

  • Preheat the oven to 400°F. Generously spray a 9x13 glass or ceramic pan with baking spray.
  • Melt butter in a stainless steel sauté pan or wide saucepan over medium heat until foamy, then continue to swirl until nutty aroma and brown bits form. Remove ¼ cup of the browned butter.
  • In the pan, add peaches, sugars, salt, spices, and cornstarch. Cook for about 10-15 minutes until soft and syrupy. Remove from heat and add bourbon, vanilla, and lemon juice.
  • In a mixing bowl, whisk together sugar, flour, salt, and baking powder. In another bowl, mix the ¼ cup of browned butter and buttermilk until combined, then add to the dry mixture.
  • Reserve ½ cup of batter, then pour the remaining batter into the prepared pan.
  • Spoon the peach mixture over the batter and dollop the reserved batter on top. Dust with cinnamon sugar if desired.
  • Bake for 45-55 minutes until bubbling and golden brown. Cool for 20-30 minutes before serving.

Notes

No need to thaw peaches prior to use. This recipe can also be made with fresh or canned peaches. If using fresh peaches, use about 12 medium peaches, peeled and sliced. For canned, use four 16-ounce cans drained to 32 ounces total.
