Ingredients
  

For the berry mixture

  • 4 cups blackberries fresh or frozen
  • ½ cup white granulated sugar to taste
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • ¼ teaspoon cinnamon
  • 1 ½ tablespoons cornstarch or instant tapioca

For the cobbler topping

  • 1 cup all-purpose flour
  • 3 tablespoons sugar
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • 4 tablespoons unsalted butter
  • ¼ cup milk
  • 1 large egg lightly beaten

Method

  • Put the blackberries, sugar, lemon zest, lemon juice, cinnamon, and cornstarch in a 9x9 baking dish. Stir to combine and let sit for 30 minutes to macerate.
  • Preheat your oven to 350°F.
  • In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk and beaten egg until just moistened.
  • Scoop up the dough in large spoonfuls and drop over the berries in the baking dish.
  • Bake for 30 minutes at 350°F or until bubbly and browned.

Notes

Great served with whipped cream or vanilla ice cream.
