Instructions
 

For the Roasted Vegetables

  • Preheat your oven to 400°F (200°C). Place halved tomatoes, red peppers, and unpeeled garlic cloves on a baking sheet, spacing evenly for even roasting.
  • Toss vegetables with olive oil, salt, and pepper until lightly coated. Roast until tomatoes blister and peppers char at edges, about 25–30 minutes.

For the Soup Base

  • Heat two tablespoons olive oil in a large pot over medium heat. Cook the chopped onion and carrot until fragrant and softened, about 5 minutes.
  • Stir in brown lentils, smoked paprika, and cumin. Pour in vegetable broth, bring to a gentle simmer, cover, and cook until lentils are tender, about 20 minutes.

To Blend and Serve

  • Transfer the roasted tomatoes, peppers, and garlic into the pot. Use an immersion blender or work in batches in a blender until soup is velvety smooth.
  • Taste the soup and adjust salt and pepper as needed. Ladle into bowls and sprinkle chopped fresh parsley or cilantro for a bright finish.
