Batter Ingredients

  • 3 medium ripe bananas mashed
  • 0.5 cup unsalted butter at room temperature
  • 0.75 cup granulated sugar
  • 2 large eggs lightly beaten
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 teaspoon vanilla extract

  • 1 cup walnuts lightly roasted and chopped
  • 0.5 cup raisins

Baking Steps

  • Preheat the oven to 350°F. Grease and flour a bread loaf pan. Roasting walnuts on a skillet, stirring continuously to avoid burning. Coarsely chop and let cool.
  • In a mixing bowl, cream together the softened butter and sugar.
  • Mash bananas with a fork until chunky and add to the batter along with the eggs, mixing until blended.
  • In a separate bowl, whisk together flour, baking soda, and salt. Add to the batter.
  • Add vanilla extract and mix in the chopped walnuts and raisins. Pour into the prepared loaf pan.
  • Bake at 350°F for 55-60 min or until a toothpick comes out clean. Let rest for 10 min before transferring to a wire rack.

Notes

Best enjoyed fresh but can be stored for several days at room temperature.
