Ingredients
  

  • 1.5 lbs Cod Fillets (about 4 thick fillets)
  • 2 tablespoon Olive Oil or Coconut Oil
  • Salt & Freshly Ground Black Pepper
  • 4 cloves Garlic minced
  • 1 can Full-Fat Coconut Milk (13.5 oz)
  • 1 large Lemon (for both zest and juice)
  • Fresh Parsley A big handful, chopped

  • Preheat your oven to 400°F (200°C). Pat the cod fillets dry with paper towels and season both sides with salt and pepper.
  • Heat an oven-safe skillet over medium-high heat and add the oil. Once hot, add the cod fillets and sear for 2-3 minutes until a crust forms. Flip the fillets gently.
  • After flipping, reduce heat to medium and add minced garlic. Stir for about a minute, then pour in the coconut milk and lemon zest. Stir to combine.
  • Turn off the burner, spoon some sauce over the fillets, and transfer the skillet to the oven. Bake for 10-15 minutes until the fish flakes easily with a fork.
  • Remove the skillet from the oven. Squeeze fresh lemon juice over the fish and sauce, then garnish with chopped parsley.

Notes

If you don't have cod, halibut or haddock work as substitutes. For best results, use full-fat coconut milk from a can. Patting the fish dry is key for a golden crust.
