Sausage and Vegetables

  • 12 oz Andouille sausage sliced into ½-inch rounds
  • 2 tablespoons olive oil
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 green bell pepper sliced
  • 1 medium yellow onion sliced
  • 2 cloves garlic minced
  • ½ teaspoon smoked paprika
  • Salt to taste
  • black pepper to taste
  • Fresh parsley chopped (for garnish)

Cooking Steps

  • Heat olive oil in a large skillet over medium heat.
  • Add the sliced Andouille sausage and cook for 4-5 minutes until browned.
  • Add the bell peppers and onion to the skillet. Sauté for 6-8 minutes until the vegetables are tender.
  • Stir in minced garlic and smoked paprika; cook for 1-2 minutes until fragrant.
  • Season with salt and black pepper to taste. Remove from heat.
  • Garnish with chopped fresh parsley and serve warm.
